Casareccia is originally from Sicily, but it is also characteristic of other regions of the South. From the shape of a small, smooth parchment, rolled up and curved to the tip, the name evokes the ancient origin, an interpretation of the Arabic "pasta busiata" obtained with the thin tube of a plant with which you once wrapped the dough pieces. Casareccia is suitable for classic ragas, although the smooth, delicately porous surface provides an ideal support for any type of sauce, from traditional to easier.
