Their first biscuits were made with olive oil from their own mill. The Gavio bakery is near Seville in Andalusia. Each biscuit is shaped by hand for a fine, light texture. This is something impossible to imitate using machinery. Each torta has its own distinctive, hand-patted shape. Gavio's bakers work with an elastic dough. This is the secret to their crispy, crunchy biscuits.
