Confit duck gizzards, known in France as "gsiers de canard," are the giblets which are in most demand (apart from the liver). Gently cooking these giblets in duck fat results in a tender, melt-in-your-mouth treat that is brimming with a deep duck flavour.
These humble duck giblets are an essential component to Salade Prigourdine, Salade Landaise as well as stuffing. These duck gizzards have a lengthy shelf life when unopened. Simply fry till golden and slice after gently cooking through.
