After the origin and quality of the raw beans, roasting is the next decisive step in the production of a good coffee.
This usually refers to the dry heating of the green coffee, which refines the coffee beans and gives them their unique aroma and appearance.
Like good wine, coffee contains an extremely wide range of aromas: up to 1000 of these substances combine to create a unique flavour for every coffee.
The right technique is just as important as a lot of experience in order to elicit the best flavours from each coffee. Coffee roasting is such a specialized craft that even championships are held.
During the roasting process, the bean slowly changes colour from its original yellow-green to its typical brown colour, while the internal water pressure of the bean causes it to double its size.
The heat is responsible for the breakdown and conversion of carbohydrates with free amino acids and proteins into a gigantic spectrum of aromatic and bitter substances.
Teperature and duration are decisive for roasting: the longer the roasting process, the more complex aroma compounds can develop. Gentle long-term roasting (over 20 minutes at max. 200C) guarantees the degradation of incompatible tannins and thus creates a very gentle, aromatic coffee.
