Ammonium Bicarbonate - Selected for Quality What is Ammonium Bicarbonate? Ammonium Bicarbonate can be used as raising agent in food for flat baked goods, such as cookies and crackers. When heated it releases ammonia and carbon dioxide gases, but no water. The lack of water allows the cookies to cook and dry out faster. Ammonium Bicarbonate can be used as foaming agent in beverage. It is commonly used as an inexpensive nitrogen fertilizer. It can also be used for buffering solutions to slightly alkaline pH during chemical purification because it entirely decomposes to volatile compounds this allows rapid recovery of the compound of interest by freeze-drying. Directions

Mix 1 part Ammonium Bicarbonate with 1 part liquid and add to dry ingredients before mixing. Use in flat baked goods like cookies and crackers. Cook at standard baking temperature until done.
