This is a very strong, intensely aromatic honey with resinous, herbal, savoury flavours; fresh and reminiscent of tropical fruits, dates and white pepper. The taste is persistent, lingering in the mouth.
It appears to be the main antiseptic substance in thyme, which is thought to forego the modern antibiotics. That's why most folk recipes use thyme honey to prevent and cure flus, respiratory infections, cough, mouth and gum issues, acne and other skin problems, including Candida. Thyme Raw honey is pure and natural, contains enzymes and inhibits bacteria in some circumstances. However, thyme honey is special because of it's powerful antioxidant properties.

Natural honey crystallizes within a few months of collection, depending on the floral variety. It should be noted that artificially added sugar no longer crystallizes. If you prefer fluid honey, put this jar in a bowl of water (40C/104F) until it becomes fluid again.
As with every honey variety we sell: Nothing is added, nothing is taken away. What you get is a wholesome, raw, unheated honey.
